Last week when I was grocery shopping, I found this new sausage, Johnsonville’s Limited Edition Chile and Roasted Garlic sausage. I knew my family loves those flavors so I picked up a pack. If you missed that post, it’s this one. Kroger Haul Nov. 2018

I had also found a special on Buitoni 3 Cheese Tortellini and I had been wanting to make a tortellini soup. Since we are finally having some cold weather here in North Mississippi, I decided it was time. I love soup when it’s cold outside!
I fried up the sausage in the bottom of a stockpot so I’d have plenty of room to add more goodies later without dirtying extra dishes.
When the sausage was done, I didn’t drain it. There wasn’t much grease as you can see and I wanted that to help flavor the soup. Next I added some chicken stock I had on hand as well as some diced tomatoes. Then in went the beans and tortellini. It didn’t seem like there was enough liquid to cook the pasta so I added a cup of water. As the pot heats, I add in my seasonings and herbs.
The beans I used are Great Northern beans I made earlier in the week in the Instant Pot. They were so good but I made 2 pounds and had quite a bit left. I put a freezer bag of them up and used 4 cups in the soup. I really don’t like to waste food so this was a perfect use for some of those beans!
And that’s about it! I let the pasta cook until it was tender. We served it up and ate it up! The kids and husband are already asking when I’m going to make it again!! I guess it will be soon because I have another pack of these tortellini in the freezer!!
This soup was so easy to make and was hearty with the sausage and pasta. Next time I think I will add some baby spinach as well. We ate the entire pot of soup! There was enough for Jason to have a bowl for lunch the next day and that was it! If you don’t like tarragon, you could easily leave it off or replace it with parsley.
This will definitely go into our winter soup rotation! Give it a try and let me know what you think! Maybe you’ll find it in your soup rotation too!
Tortellini Soup with Sausage and White Beans
Hearty soup with sausage, white beans and tortellini takes no time at all but fills you with warmth.
Ingredients
1 pound Johnsonville Chile and Roasted Garlic Sausage
20 ounce package Buitoni 3 Cheese Tortellini
4 cups chicken broth
2 cans diced tomatoes, not drained
4 cups (2 cans) white beans
1 cup water
1 tsp. tarragon
1 tsp. garlic powder
1/2 tsp. crushed red pepper flakes
1 tsp. salt
1/2 tsp. black pepper
Directions
- Fry the sausage in a stockpot.
- Without taking off the heat, add in the broth, tomatoes, beans and tortellini.
- If needed add the water.
- When soup begins to warm, add seasonings. Adjust to suit your tastes.
- Cook until pasta is tender.
