I shouldn’t even be sharing this one because it is SO EASY! You will never believe how fast it is to throw together or how fast it disappears. This is by far one of the easiest dinners I make, but it is one that my family begs for again and again. Even the pickiest eaters gobble it up.
It’s the perfect meal when you want to feed your family good and still have time for them after! Also, with such common ingredients, I bet you can put it on your dinner table tonight!
First, I let my chicken thaw in the fridge overnight. Alternatively, I could cook it in the Instant Pot, but since I remembered the night before to thaw my meat, that’s what I did this time. While that’s cooking, I open and drain my vegetables and add them to the milk and soups in a bowl. When the chicken is finished boiling, it gets added in too.
Now, full disclosure time! I do not like pie crust! I’m not good making it from scratch and I don’t like the taste of the ready-made ones. So for this recipe, I use canned biscuits. I like the really little cheap ones because they seem to work the best. I’ve also used some frozen biscuit tops that I found on sale one time. They were great too. I suppose if you make good drop biscuits, that would work just as well. I started making this dinner with 2 cans of biscuits, but my kids would fight over who got the last one, so I added another can.
The chicken mixture gets spread evenly into a casserole dish. I like this giant Pyrex dish that is larger than a 9×13 and fairly shallow. Then I lay the biscuits on top and butter them. A good sprinkle of thyme over the biscuits finishes it off.
It bakes in a 350* oven covered with foil for 15-20 minutes, then uncover to finish browning the biscuits. When the biscuits are done all the way through and the mixture is hot and bubbly, dinner is done! And – you didn’t use every dish in the house and you still have time for that movie or board game the kids have been asking for!!
You can even get the whole casserole together earlier in the day and just leave it in the fridge until a half hour or so before dinner. How’s that for an easy meal?

Easy Chicken Pot Pie Casserole
Super easy weeknight meal with a traditional chicken pot pie base with an unusual biscuit top.
- 2-3 pounds chicken breasts, diced
- 2 cans cream of chicken soup
- 2 cans cream of mushroom soup
- 4 cans mixed vegetables, drained
- 1/2 cup milk
- 3 cans small cheap biscuits
- 1/4 cup melted butter
- 1 teaspoon thyme
- Boil chicken in water until done.
- Mix soups, milk and vegetables in bowl or casserole dish.
- Add chicken into mixture and smooth into dish.
- Place biscuits in single layer on top.
- Butter tops with butter and sprinkle thyme over.
- Bake at 350* covered with foil 15-20 minutes, then uncover to let biscuits brown.
