Supreme Pizza Lasagna

Hi everyone! I hope 2019 is off to a wonderful start for you and your families! We have been having the best time this holiday season, hanging out playing board games and watching some of the movies and shows we had on our to-be-watched list. The girls have made slime and had some of their friends around for a good amount of their break too.

We ate so much good rich holiday food! We had hot wings in 3 different flavors, ham and swiss sliders, Rotel cheese dip, raw veggies and Ranch dip, cornflake candy, lemon bars, chess pie, fudge and cookies. It was all so delicious. I generally do the big traditional Thanksgiving dinner and then for Christmas we just do whatever tickles our fancy that year. On previous Christmases we’ve had: Steak and Potatoes, Baked Ziti and Salads, Ribs and Cookout type sides, and even a big Mexican food buffet one year.

By the time we got through all the leftovers, I wanted something completely different. I was craving pizza and supreme is my favorite but I also wanted pasta. So I thought – why not have both?!?

That brings us to Supreme Pizza Lasagna!! It was so good and not a single serving went to waste because I ate the last helping for breakfast the next morning! It was very easy and I am positive if your kid likes pizza, they will love this dish! It might give you a break from the same old pizza they request all the time!

First I went through my pantry, fridge and freezer and gathered all the pizza/pasta ingredients I thought I might use. I then got my noodles in a pot of boiling water and finely diced half of a small onion. I had about half of a green bell pepper in the freezer too. I fried my sausage in a skillet and tossed in the onion, peppers and mushrooms to cook them just a little. I wanted to soften the onion and pepper and cook some of the liquid out of the vegetables.

By the time the sausage and veggies were done, the noodles were aldente and I was ready for assembly. I spread a scoop of sauce in the bottom of a large 4.8 quart casserole dish and then began layering my ingredients. I started with noodles, next pizza blend cheese, then pepperoni, then meat and veggies, and then more scoops of sauce. The next layer was noodles followed by the entire container of ricotta sprinkled with Parmesan and the other half a bag of pizza blend cheese. Next I made a layer of the remaining lasagna noodles, pepperoni, meat and veggies and sauce and topped it all with the other bag of cheese. I know that’s a lot of cheese but we love it!

Then I popped it into a preheated 350* oven for 20-30 minutes while I cleaned up my mess and washed up the few dishes I’d used. Super easy! I think next time I’ll make a green salad to go with it and I’ll be sure to cook my vegetables a little more. You can see in the final picture that it was a tad bit liquid-y at the end. I also photographed 2 jars of sauce but wound up only using one. The Classico was on sale at Kroger for .99 and is delicious! I usually add some herbs and seasoning to ready use pasta sauces but this one I used right from the jar!

Supreme Pizza Lasagna

  • Servings: 8

A delicious easy hybrid of pizza and pasta, easily customizable to your likes.

Ingredients

  • 6 ounce pack of pepperoni
  • 1 lb. Tennessee Pride mild country sausage
  • 4 ounce can mushroom pieces
  • 15 ounce container ricotta cheese
  • 1 jar Classico pasta sauce (I used Roasted Garlic)
  • half of a small onion, diced
  • half of a green bell pepper, diced
  • 2-12 ounce bags of Pizza Blend cheese
  • 2 boxes lasagna noodles
  • 1/4 cup grated parmesan cheese
  • other ingredients as you so choose

Directions

  1. Preheat oven to 350*
  2. Prepare lasagna noodles to al dente according to box instructions.
  3. Dice onion and pepper and arrange all other ingredients to ease layering.
  4. Layer as follows: sauce, cheese, noodles, pepperoni, meat/veg, sauce, noodles, ricotta, parm, cheese, pepperoni, meat/veg, cheese.
  5. Bake 20-30 minutes until cheese is melted and browning and hot all the way through.
