Hi friends!! I hope you all are having a wonderful January!! It has been so cold this week! I wanted to make a good homey meal to really warm us up and I thought Chicken Parmesan sounded perfect. I also didn’t want to spend the whole night in the kitchen! Jason has been working 12 hour days for a while now and I really like to have dinner finishing up about a half hour after he gets home. That gives him time to jump in the shower and wind down a moment before we eat.
Chicken Parmesan is not a complicated meal to make, but it tastes like you spent all day! I’m going to show you a few shortcuts to take this meal into your weeknight.
First, you want to lay your palm on your chicken breasts and cut them into thinner fillets. This will help them cook faster and gives them a better mouth feel when you’re eating them with the pasta and cheese. I had mine frozen in zipper bags already cut into the filet size I needed for this meal.
I broke my eggs in a shallow dish and added a little milk, salt and pepper. Then I poured about a cup of roasted garlic bread crumbs in another shallow dish and mixed in around 1/3 cup of grated Parmesan cheese. I got some oil heating in a skillet and when it was hot I started battering the chicken fillets and frying them quickly in the oil. When I got both sides golden and crispy, I placed the chicken on a sheet pan and popped them in the oven to finish cooking for 20 minutes or so.
While the chicken was baking, I boiled the pasta and drained it. Then I added the pasta sauce to the pasta and a little bit of parmesan. I have to say that the Tomato and Basil Classico was perfect for this meal. The basil really paired well with the chicken and the cheese. When the chicken was done, plating was a breeze. I just sliced the filets into inch wide slices, placed them on top of the pasta and gave it all a good sprinkling of Italian blend cheese. A side of garlic bread and dinner was done!
