Meat Storage and Planning

Hi friends!! Last week I did a lot of grocery shopping. I like to work at the end of the year toward using up older items and at the beginning of the year I do the restocking. The past two weeks I found some pretty good sales on meat and decided to stock up a good bit. We will be eating meals out of these but some are just extra to have on hand.

First I found beef chuck roasts on sale at Roger’s for $2.98 a pound and grabbed 2. I immediately put one in a zipper bag and froze it for pot roast later on. The other Jason wanted me to make Italian Beef Hoagies with so it went into a bag with an entire bottle of Ken’s Simply Vinaigrette Italian and a whole jar of pepperocini peppers. Seriously the best way to make Italian Beef this Mississippi girl has tasted.

Then I found boneless skinless chicken breasts on sale at Kroger for $1.88 a pound and bought 3 big packs. Jason was sweet enough (as always) to clean up all the meat for me and from the chicken we got:

  • 1 pound diced for Cajun Hashbrown Casserole
  • 3 lbs. chunked for Pesto Ranch Chicken and Rice
  • 2 lbs. diced for Homemade Chicken Noodle Soup
  • 1 1/2 lb. extra (we just diced for ease of use)

Also at Kroger I had a rain check for boneless pork loin from last month for $1.49 a pound. I bought three half loins and forgot all about checking the weight on them. I’m sorry about that, next time I’ll take better notes! Jason managed to cut these up into a lot of meals for us.

  • 3 meals of 7 pork chops (1 for each of us and an extra for his lunch)
  • set of 7 thin sliced pork chops for pounding out into sandwich thickness
  • 2 – 2 pound pork roasts for barbecue or whatever
  • 1 pound finely diced for pork fried rice or egg roll bowls

Also on one trip to Kroger I found on WooHoo two packs of the Johnsonville Sausage I used in Tortellini Soup with Sausage and White Beans. I still have a pack of tortellini in the freezer I need to use so this will be on the menu soon! Another trip, I found a couple of beef steaks on WooHoo fairly priced and Jason cleaned the fat off the edges and cut them into strips for Teriyaki Beef and Broccoli. I went ahead and poured half a bottle of teriyaki sauce in the bag with the steak strips so they’ll be ready to cook when I get it thawed out.

Whew!! That is a lot of meat, even for our large family! By my count that’s 16 meals for us! Not bad at all considering that all of it was on really good sales. Also it’s a good blend of chicken, pork and beef. How do you store your fresh meat? Do you buy only what you need so you can use it still fresh? Let me know in the comments below!
