Grimes’ Family Valentines 2019

Hi guys! I hope you all had a wonderful Valentines week! We sure did! I woke up to candy from my sweet hubby. He bought all of us girls a Reese’s heart box and found me some conversation hearts! I love them and it doesn’t feel like Valentine’s Day without them!

Then I had a couple of doctor’s appointments to go to but afterward I finished up my grocery shopping for the girls dinner I had been planning for weeks! I saw this picture on Facebook-


And with my kids, I knew they would LOVE it. So that’s what I set out to have for our Love Day Dinner. I put my own spin on it, of course. I made Mexican chicken in the Instant Pot while we cut up the veggies and got the ground beef cooked. I also heated up some re-fried beans. I actually made a lot more than we would eat and after dinner we made about 20 more tacos and wrapped them for the freezer, as well as put up a bag of beans and a 2 pound bag of chicken in the freezer. I’ll pull those out at some point and use them in a casserole, salad, or just tacos one night when we’re crunched for time.

The girls were so happy with my dinner! My oldest told me the other day on the way home from school that she wasn’t even worried about not having a boyfriend for Valentines. I told her that was fine, nobody will ever love her more than me and her daddy anyway! I also told her I think Valentine’s Day is not just for couples, I think it is more about LOVE than anything else. What are your thoughts?


I don’t know about y’all but it is HARD to draw and then cut out a giant heart on foam board! It took me a minute to get it close to what I wanted! Then I covered it with foil and taped it on the back so hold it in place. Then I assembled our soft tacos with beans on the bottom and meat. I left everything else off so everyone could get their favorite toppings. I lined the tacos up, chicken on one side and beef on the other.
