Quick Easy Weeknight Chimichangas

Hey friends! It’s been pretty crazy for the Grimes’ Family these last few weeks. Tuesday we have to drive almost 2 hours away so my youngest daughter can have an endoscopy to see what is wrong with her tummy. I’ve been pretty worried about it. In the beginning, we were told she has IBS, then our primary care doctor said she wasn’t happy with the amount of medication my daughter is taking so she sent us to LeBonheur for testing. Our doctor thought she might have had celiac disease, but blood tests have ruled that out. So here we are, still wondering! Hopefully we will have answers soon.

On to the food though! If you recall, for  Valentine’s Day I made the girls a big spread of tacos and I had a good amount of Mexican chicken left over from that meal that I froze. This week I decided I really wanted a chimichanga like I order at Mi Toro, so I thawed the chicken and made my own! I can’t believe how easy and delicious they were! A definite hit and my family has already made me promise to make them again!

All I did was take flour tortilla shells, add a couple spoons of beans, chicken and a good sprinkle of cheese and then wrap them very tightly. Don’t overfill! Then in a skillet with an inch of canola oil, we fried them, seam side down until browned on that side. Carefully flip and brown the other side. We let them blot on a paper towel lined plate. So good! We served them with sour cream and salsa with rice on the side. From start to finish this meal only took maybe a half hour to prepare, not bad at all!
